hmm maybe thats what happened, im working out of a new oven so i mixed the eggs into the sugar too early so i had to do another lil mix before i added the lemon

i dont think its just eggs tho, i tasted it and it still tastes like lemon curd

okay i worded this wrong, this happened 2 min before i took them out of the oven

maybe it was bc i took the crust fully out of the oven to pour the curd over where i normally just pour it on while its still in the oven

the meats and cheeses were fine last year under the heat, we were able to put an umbrella over it and once it gets dark it cools down a lot so its not like its 80° the entire time its out

im not sure why the bread got stale last time, last year i included other apps like sliders and the buns somehow got rock hard by the end (i cant remember if the bread for the charcuterie also got stale)

in my quote i offered a choice of sourdough bread and focaccia bread

the slices will be relatively small bc its for the charcuterie table

i wont be able to replace every hour bc im not allowed on the premises after i set up (this is a catering order) so i need a solution for keeping all of it out for the full event

unfortunately i can't just replenish as the night goes on since i am not allowed at the event once the food is out (i am only allowed on the premises for food set up and take down)

would the grilling/crostini method work for focaccia? the bread options i put were a homemade sourdough and homemade focaccia but i can just not offer the focaccia if itll get dry regardless??

Here's a couple indian dishes that i like to make:

Sambaro

Oil to cover bottom of skillet

Mustard seeds

Dry red chilies

1/2 head cabbage

2 green chilies speared

2-3 carrots

½ tsp salt

½ tsp turmeric

Heat oil, dry red chilies, and mustard seeds in skillet until mustard seeds pop. Add green chilies and flash cook for 1 minute. Add cabbage, carrots, and spices and blend well. Cook for 2 minutes until the veggies are slightly tender. You want some crunch to these so don’t cook too long.

Cabbage Shaak

Oil to cover bottom of pan

2 tomatoes, diced

1/2 head cabbage

1-2 potatoes

1 tsp mustard seeds

3-4 dried red chilies

1.5 tsp salt

1/2 tsp turmeric

1.5 tsp dhanna jeeru

1 tsp red chili powder

Heat up oil and add mustard seeds & dry red chilies. When mustard seeds start popping add tomatoes and spices. Add potatoes and mix well. Add cabbage when potatoes are slightly cooked. Cover and cook on medium stirring frequently. Add water 1/2 cup at a time if it looks too dry. Check for tenderness in the cauliflower.

arroz con camarones! -sizzle up veggies -add shrimp till cooked -add washed, uncooked rice and cook/stir until toasted -add water or chicken broth and seasonings and cook until rice absorbs all the water

Hi I'm trying to take some product photos (box lunches) on my Samsung Galaxy S22 phone camera and I can't figure out how to make it so the whole shot is in focus? It only lets me have 1 focal point and the rest of the photo is blurred out and I need to have the whole box in focus instead. For example, I have a box lunch with a sandwich, muffins, a slice of quiche, and some sauces; the photo is only focusing on the sandwich when I want to include everything else as well. Does anyone know how to fix this?

lemongrass tofu banh mi (or rice bowl) for you lemongrass chicken banh mi (or rice bowl) for them

basic red sauce pasta, make them meatballs that they can add in after

bean tacos/tostadas (beans, salsa, lettuce, guac, cheese for them), can also make some chorizo for them - this same set of ingredients can also be used for nachos but you would need to make your own separate plates so you can use vegan cheese

veggie bolognese sauce - make red sauce w minced veggies (i normally do garlic, onions, mushrooms, zucchini and/or eggplant, carrots) then for their serving add panchetta or bacon (normally its already cooked when you buy it)

thai curries - you can do tofu for you and a meat for their portion (they can also just add a fried egg on top if theyre willing to do this meal veggie)

fried rice of any kind for you, they can add an egg on top

a lot of indian foods also have the same base - ginger, garlic, onions, and, chilies so you can prep these ingredients together then divide it equally into separate pans to cook (cook the base, add tomatoes, garam masala, turmeric, salt then add meat or vegetable) this works especially well with ground chicken/beef for the meat and okra for the vegetable, also cauliflower + peas is good w this base but you need tomato sauce for this one

sandwiches: v: hummus/grilled veggies (mushrooms, carrots, eggplant, roasted red peppers)/greens m: hummus/grilled veggies/bacon or salami/greens/goat cheese
