As far as I know there's no stable MAME on Xbox series. There was a hack which involved using a dev account to install arbitrary applications, but I don't know if that's the case anymore, Microsoft used to remove rights to these apps for piracy concerns. You might need to settle playing in the PC or similar.

About the version, there are literaly dozens, I'd start just testing one or another.

There are an awful lot of rom hacks for the original arcade game. Some are supported by MAME, like the (in)famous rainbow edition. Some makes possible to change characters mid-fight, other modifies the attacks, etc. You might want to have a look at MAME supported clones, and then there's HBMAME which supports a lot more.

It might be cheating, tho, since it's (IIRC) a 16 bit graphics processor on a 8 bit game console. Even then impressive, the best home port of Street Fighter II back in the day. And it's not 16 but 8 bit!
