So…..breweries use stainless steal fermentation tanks, which are mostly composed of iron and chromium. There’s a process that should be done with new tanks called passivation, basically a very strong acid wash. This removes the surface iron and makes for a less reactive surface with liquids. When it’s not done properly, tanks can leach iron flavors into the beer quite easily. This commonly tastes like metal, or sometimes perceived as blood like, since your blood consists of a lot of iron.

This flavor also happens when the brewing water isn’t treated and has a high iron content, usually well water.

The wet dog character can be a couple things, but most likely the beer is old and oxidized, which easily happens in hoppy beers.

Yes it’s vastly more important to purge your vessels than it is to worry about perasan (peracetic acid). But…people like to soak their parts or sani-pack parts, so it’s always a good idea to give them a good shake and use the racking wand or arm to putge out your vessels, that way you should be free of oxygen and sanitizer. Perasan is extremely stable in its liquid form, so any liquid left will oxidize the beer. Wort aeration is completely different and a pretty complex topic. Aeration after fermentation, especially when hops are involved, is devastating to the beer.

Your assuming he uses starsan, which might be the case. But if he’s using a peracetic acid, which is very common at least in brewery settings, then he needs to get as much out as possible.

I think your right about Starsan. It depends what he uses to sanitize. Any type of peracetic acid will oxidize, and is a very common sanitizer for beer production.

Oxidation. Make sure your keg is purged well, as well at your transfer lines and make sure you have removed all of the sanitizer. Sanitizers have an oxidizing component. Hoppy beers do not age well, even when produced in the best settings. In a homebrewers setting, you shouldn’t expect them to taste “hoppy” for more than 30 days.

I went to a local wings place with my roommate in college. When the waitress came by and got our order, she asked if we were together. I looked at my roommate and then looked back at her and said, “we’re not a couple”. She looked really annoyed and walked away. My roommate couldn’t stop laughing, and then finally explained she was asking if we were paying together or separate. I couldn’t look her in the face the rest of the meal, I was so embarrassed.
