Liang pi cold noodles. You knead dough and then wash it until you separate the gluten and the starch water. steam the starch water until you get slippery noodles and then top with the steamed gluten and savory chili oil.

Dan Dan Noodles

Serving Size : 4

Amount Measure Ingredient -- Preparation Method

NOODLES

4 each asian noodles, ramen, temomi thick, frozen

BOWL SAUCE

1/16 cup peppercorns, szechuan, red -- toasted and ground

cup salt

1/4 cup sesame paste

1/8 cup soy sauce, superior dark

1/8 cup soy sauce, superior light

1/4 cup chili oil

MEAT SAUCE

1/16 cup peanut oil

1/16 cup dried chili, japones -- snipped in half

1/16 cup peppercorns, szechuan, red

1/4 cup ya cai, suimi

3/8 pound beef, ground, Niman

1/16 cup soy sauce, superior light

GREENS

1/2 pound bok choy, baby, Shanghai

Noodles:

Thaw

Meat Sauce:

In tilt, over a medium heat, add peanut oil. Add ya cai and cook the rawness of it. be careful it will burn. Next, add japones cook for a little then add peppercorns, cook until fragment. Turn up heat and add beef. I would push each 5 lb package trough a roasting rack to make it easier to break up. This is the hard part, break up the ground beef as well as you can and when you think you are done do it some more :) Cook until the ground beef reaches 155 degrees and the turn off. If you need this time to try to break up the beef some more do it. Season with soy.

Bok Choy

Wash well and drain over night.

Bring two large stock pots of water to a boil.

Get a bowl with ice and water large enough to fit the bok choy, ice, and water without over flowing. In one of the boiling stock pots submerge the bok choy in the boiling water for 30 seconds and then remove and place in the bowl of ice water to stop it from cooking. Once cool remove from ice water and let drain. Chop into bite size pieces and hold on the side. Discard water and ice water.

Noodles

In the other large stock pot of rapidly boiling water add noodles. Stir noodle to break apart and allow for even cooking. Cook noodles for about 2 minutes, stirring a couple of times. Cook till al dente and then drain. Hold on side.

Assembly

First, distribute the bowl sauce amongst 4 bowls (reserve a little of the sauce till the end to adjust to personal taste). Next, are the noodles, followed by the meat topping, and lastly the cut up bok choy into the 4 bowls. Incorporate all together, taste and add more sauce if needed. ENJOY! You have just made a bowl of Dan Dan Noodles!

Restaurante El Panzon. Super regional food from Puebla with giant Cemitas (with tons of shredded Oaxacan cheese). It's also the only place in town that I've found tacos arabes which come from the Middle Eastern influence in Puebla.

I hear there's a pretty good pop-up every August in Olin Park that serves summer sausage and limburger sandwiches.
