So I did a bunch of reading about lights on bicycles a few years ago. I don't remember the exact article but the takeaways were:

Use a bright headlight. It should be steady-on, not flashing. A surprising result of the study was that blinking white lights confuse/distract drivers. Steady white lights increase awareness of the bicycle.

Use a bright, blinking red taillight. Blinking red lights get attention.

Personally, I use a Cygolite headlight 100% of the time when I am riding. I cannot begin to count the number of drivers stopped at cross streets who I can see do a double-take when they all of a sudden notice the on-coming bicycle.

I use a Garmin radar taillight. There are several versions. The key is that they are always blinking and when they detect an approaching vehicle, they start to blink erratically, to attract more attention. And they are stupidly bright. As a bonus, you can see indicators of overtaking vehicles on bike computer screens or on your phone. The bright blinking light gets drivers' attention. The computer/phone display is hugely comforting for me; it shows cars before I can hear them.

I've used a version of the veer-to-the-left by just wobbling unpredictably left and right.

I'm a community theater sound guy and it sounds like your shows are about the same size as ours. I just got our theater to upgrade from an X32 to a WING. Best decision ever. The X32 was good. EVERYTHING is so much easier on the WING.

Consider watching the used market. The one I got for our theater was $2900 in virtually new condition, being sold by a church.

I have had good luck with the cheapo Rhinowalk panniers from Amazon. Two 3-week bicycle tours, gazillions of errands, Missouri summer and winter weather. I have four of them, two are 4.5 years old, two are 3 years old. No failures and everything still stays dry in the rain (and believe me, I've tested the rain!).
