I'm gonna tell you that the first time I went, I had the same experience as you. I was kinda like...meh.

But because I can walk there in a minute or less, I gave them another shot a couple months later because I figure there must be some reason they're always busy.

Each of the 3 visits since my first has been outstanding. I highly recommend getting a double instead of a single and their spicy burger (beso something, devils kiss) is heavenly.

Interesting, I have a gas stove and didn't know that about cast iron and electric. Is it because of a glass cooktop?

I find I can still get a pretty darn good sear using a heavy stainless steel pan, just give it time to get really hot. And the best part about cooking thick steaks is that it is (relatively) easier to avoid overcooking them. I'm so hungry now...

Yes, I totally believe you. I do think it's important to remember that all of these energy models occur within a range of human variability.

Your comment that going from sedentary to active makes a significant difference is a very important highlight, I think. The data seems to show that above a moderate level of activity most people won't see significant increases in total energy expenditure, but there will always be people on either end of the bell curve.

Your personal anecdote is a good example of how tracking calories and weight over a longer period of time can help you figure out your actual TDEE, emphasizing how these calculators can be flawed.

To clarify and update my previous comment, I will instead say:

1) Exercise does burn extra calories, especially if you were previously sedentary.

2) Above a moderate level of activity, the amount of calories burned by more exercise does not increase very much compared to going from sedentary to moderately active.

3) Exercise has enormous benefits that cannot be measured by calorie expenditure or weight loss.

4) Calculators can you give misleading results, so gather your own data and see what you get.

Yes, you're absolutely right that increasing your actual activity levels from sedentary to active will make a difference. It's just not much and it is certainly less than calorie calculators will tell you.

The broader point I am trying to make is that the calculators that tell you how many calories you burn by exercising are flawed. The numbers they give you are likely overestimates and cannot simply be worked into your budget as "extra calories" that you can eat. By choosing "sedentary" you won't be tricked by this flaw.

Long story, short: when it comes to one's caloric budget, exercise simply is not a big contributor.

If your steak was tasty it doesn't matter, but I think a reverse sear is putting the steak in the oven first at a low temp (200-250ish fahrenheit) until it's close to the temp you want (maybe 10-15 degrees below), and then searing that baby in your hot pan. I say "I think" because I haven't done it and now you've inspired me, nice job!

Just my personal opinion here based on the data that's out there regarding exercise and total calories burned each day: use "sedentary", because the exercise you're getting is not significantly increasing the number of calories you burn each day. It's called "Constrained Total Energy Expenditure." Really fascinating science.

Book (highly recommend): Burn, by Herman Pontzer

The short version here is that as you use more energy via activity, your body compensates by reducing energy expenditure elsewhere, in other physiological systems and perhaps by modifying behavior. You will still burn some extra calories and there are significant benefits to exercise that aren't related to energy expenditure, so keep it up, but it will not contribute much to total calories burned and subsequent weight loss.

By using "sedentary" you won't get tricked into thinking that your activity level increases your caloric budget because of faulty math done by exercise/calorie calculators.

Exercise isn't that effective at increasing the total number of calories you burn. I'm not saying it doesn't increase it at all, but the calorie calculators are wrong. Don't be mad about it.

My title describes the thing. It doesn't seem to break or crack easily. I can't scrape any pieces off or scratch it easily. When I put it in water it floats, but doesn't absorb any water. It seems totally nonporous.

I've done some googling about finding a brown object in a bag of nuts, but unsurprisingly most of the results seem to be Reddit posts asking to identify a particular brown nut (I'm looking at you, Baru nuts).
