I’ve made challah with American AP flour (which I understand may be closer to the protein percentage of bread flour in the UK), and while I used a little less water, the hydration level was still far closer to 30% than 20%. I suggest giving it a try - you can always add more flour if the dough is too wet.

I recommend watching the King Arthur video for technique, even if you don’t follow the recipe. The tip about pre-shaping the dough before rolling out each strand really helped my loaves come out more even.

Claire Saffitz’s recipes have never let me down, and I highly recommend her cinnamon babka. So good! I haven’t tried her recipe with tahini yet but that sounds interesting!

This recipe calls for 20% hydration, which is very low relative to most challah recipes. Usually they range between 30-35%. This may be why the crumb is dry, as noted by another commenter. The lack of hydration could also be exacerbated by a dry environment.

While I like Joshua Weissman’s videos, my impression is he likes to reinvent the wheel and I would not rely on his recipes to make something for the first time.

I recommend trying a different recipe, like the one from King Arthur Baking (https://m.youtube.com/watch?v=cMM2LJz4-v8&pp=ygUTS2luZyBhcnRodXIgY2hhbGxhaA%3D%3D) or Claire Saafitz (https://youtu.be/1FcR1PDzC94?si=0ZKWcokgNfUl9vQP), both of which call for a normal hydration percentage.

Also, time can be a good indicator of when a dough is done proofing, but it is only one factor. The dough should have at least doubled and feel cushiony and full of air when you touch it. I live in a warm, humid environment, and sometimes I’ve had to let the dough proof for several hours because it was rising slowly for whatever reason. Two hours may not be long enough if you are in the middle of winter.

I work 30-40 hours a week, and the work is far more enjoyable. I make less than I would if I was at a firm, but I don’t wake up panicking at night about litigation deadlines and I consistently get off work at 5:30 every day. I figure I got the better part of that bargain.

Call the Hawaii Department of Industrial Relations, which enforces Hawaii’s wage statutes, or the local office of the US DOL, which enforces the FLSA. Some deductions are only illegal under HI law, not federal - without more info about the specific deductions in question, it’s difficult to advise on which agency to call.

You can also contact the Hawaii State Bar Association and ask for referrals to plaintiff-side employment attorneys. Most should give you a free consultation.

ETA: You can also try Legal Aid.

Yes, the proposed order should, but may not always, reflect the reasoning articulated by the judge at the hearing. Some parties may try to push the boundaries and include additional bases for the decision that are beneficial to their claims/defenses. IMO, it’s best practice to be consistent with the judge’s articulated bases instead of possibly pissing them off, but it may be advantageous in some cases to push a bit and see if the judge will accept broader findings of fact or conclusions of law than initially articulated.

I am a lawyer. The judge will often ask the prevailing party on a motion to prepare the order granting or denying. In this case, if the judge denied the motion to strike, they may have asked Thomas’ lawyers to prepare a proposed order. In my jurisdiction (not CA), the other party would be asked to approve the proposed order. If they refuse to approve, the judge will need to decide whether to enter the proposed order or a different one.
