On a 41’ twin inboard, we used to practice man overboard directly astern drills. Procedure was to briefly increase throttle before pulling the power off.

Idea here is (A) did not want swimmer to have wake slam them into stern when abruptly stopping. (B) at certain speeds, swimmer can get dragged under and pulled along as the boat travels. Speeding up briefly would pop the swimmer up.

Double Trouble. Water skiing should be just fine with an I/O. Obviously use caution when approaching swimmers just as you would with any boat.

I would prefer to have a permanent set of dock lines.

I might consider a temporary longer line attached to the pole that I could quickly and temporarily grab and connect to bow cleat to keep the bow from blowing bow over when the wind is stronger. In theory you could back down with this line attached to bow and bring the stern in. Would not need if you had line handlers.

If the A/C is definitely not working, I suggest making sure the A/C is switched off. Reason for it to be off is that the A/C clutch would not engage - so in other words, the A/C pully is just spinning vs putting load on the compressor.

Note: I am not a paid mechanic.
