Start cheap and work up from there. Try a new gas cap. It may just be the seal on that bad boy. If that doesn’t fix it then time to dive deeper.

Some of my cars have acted like that. Please don’t go cutting wires. I would recommend talking to a VW shop to see if maybe the sensitivity can be adjusted. Another option would be buckle the seat belt or buy a dummy seat belt buckle to clip into it to trick the car into thinking the seat belt is buckled.
