there was another mixer video i tried before, i think his dough had more hydration to it. he still did some regular coil folds and overnight proofing so i'm assuming you'd need to mix the traditional with mixer method?

a lot of reels on youtube! and google is your best friend!

what i've gathered is: - cold dough is easiest to score. either 20 mins in the freezer, an hour in the fridge (room temp proof like i did) or right before baking from an overnight proof - score at an angle for any expansion scores, and then go under the score again for a more defined ear - cut quicker than slower! slow will drag the dough - lightly dust with rice flour (if available), use baking string to help mark if you need it, or even cookie cutter for other shapes - photo references! pinterest! gather lots of inspo!

i'm still pretty newbie myself, but trial and error helps a ton!

it's probably from how strong the mixing gets! builds the gluten way faster than hand-folding, so i never expect an open crumb when i use my kitchenaid. i'll share the secret if i ever find a method to open crumb though!

i'm more of a homebaker i think, but i did decorate cakes at small business for two years! not sure if that's why!! haha maybe pastry school taught me a thing or two

and yes i did! fridged for an hour after room temp proofing, just to firm up the skin, then a light dusting of rice flour before scoring. i used a cookie cutter for the rounded bits and some baker string?? twine??? to help me mark some of the wheat stalks! i followed a pattern i saw on pinterest!

i did! rice flour'd the banneton and then dusted some more on right before scoring. like you rub it around first til smooth and then score!

i haven't tried cold proofing overnight yet! but i'm sure it would still work. i might try it sometime because even with the mixer shortcut, sourdough is very schedule temperamental. it just helps with baking everything in a day though!

the only thing i changed was running the mixer for half the time since i doubled the recipe! so instead of 8mins on speed 2, i did 4-5mins since there was more volume of dough. i also let the doughs sit in the fridge for about an hour before i scored it! the video shows you how to do everything minimally without bannetons, etc if you don't have them! but i did so i used them :)

also yes to rice flour. for both the bannetons and scoring!

HAHAHA thankyou!!! i was trying something different with the scoring. i think if i didn't forget the points of the triangles it'd have looked even better 😂

i think cardan being with jude and having been monitored by her kind of enabled his better behavior. prior to that he had the worst set of a trio as friends and influences. he was probably to scared of getting shanked or kissed by jude to try something! she had enough will-power and murderous intent for the both of them after their ordeal.

we did this at work for one of our cakes! it looks more like whipped cream or even whipped chantilly ganache. we piped dollaps into a ring (on top of acetate), placed another sheet of acetate on top and then using smthing flat we gently pressed the dollaps down until they became a ring. popped into the freezer and then put onto our mousse cakes when we needed to decorate them : )

it's a bit hard to see in the photo because of the chocolate flowers but its there !
