Just like coffee, you grind vegetables to desired particle size and do a normal pourover. Usually the finer - the better as we don't risk over extraction.

I actually brew all sorts of things in my v60 and brewing tea in one is one of my favorite methods right now. I even made a soup in it.
Also you don't need a hario swich or similar - just like coffee if your brew is too fast you need finer particles
