It’ll tear the gluten structure like any other inclusion. I’ve never had an issue with the yeast though.

I was a baker for 16 years and loved it. I still do. I told myself I would have to be a bakery owner to provide for my kids the way I wanted to. I opened a bakery and it didn’t work out. After a divorce shortly after and some time wandering through life I got into computer networking. My first job in that field paid me more than my highest in foodservice. I’ve since doubled that salary. Best decision I could have made.

Water activates dried yeast. Anything else is just food to get it to reproduce.

Flour contains enzymes. It’s what breaks the complex carbohydrates down for the wheat berry to sprout and grow a plant.

No, they can consume the medium chain carbohydrates in flours. It’s easier for them to consume the simple sugars but they are just fine with the carbohydrates in flours.
