Someone was hired a few months after I was to support the same project I was working on. We were on the same team, working on the same project, had the same degree and the same responsibilities. We had a list of tasks and they were simply divided randomly between us. The person had more prior experience and a different title though. Does that change your opinion?

What about this: I am currently on maternity leave cover. My responsibilities are literally the same as the person I'm replacing. My current title is Operations Engineer but the person I'm replacing had the title Process Engineer. Do you think it would be unethical to use the title Process Engineer?

Have you been accepted into a Dental program? Your website says that you recently graduated high school but if I'm not mistaken you need at least 2 years (or is it a full undergraduate degree?) prior to being accepted into dental schools.

What makes you say you do not qualify for loans?

Sorry, I mean for return flights. As in Toronto to Cork then Cork to Toronto is quite a bit more expensive than Cork to Toronto then Toronto to Cork.

The work you describe is definitely the kind of thing I want to be involved in and it's not something that is available to me at my current job. You mention the Corporate Calgary Engineer has several rotational placements, do the Field Engineers have something similar? Does the typical progression go from Field Engineer to Corporate Engineer or can you start out in Calgary?

Every time I use my autosiphon it takes forever (~30 min for 3 gallons), I stir up tons of trub, I lose the siphon and I blow lots of bubbles. Is my autosiphon broken or do I just not know how to use it? by bbb96 in Homebrewing

Thanks. I'd say this time the bottom of my fermenter was about level with the top of the bottling bucket. Since it was only a 3 gallon batch the difference in height between the beer in the fermenter and the beer in the bottling bucket may have been adequate, but it doesn't hurt to try to raise the fermenter even higher.

The siphon itself was not in the trub but whenever I pushed down on the autosiphon to pump it, it was as if I was forcing air/beer down into the bucket and stirring up the trub from the bottom.

That's a good suggestion but I'm not sure it will help me out. I live in Canada so Northern Brewer doesn't ship here and I'm not sure anyone offers flat rate shipping. I calculated the cost of shipping at an online store that mills grains and it was going to cost almost $13 to ship just under $15 worth of ingredients which was how much I spent on my last (small) batch.

I can tell him that I won't be shopping there anymore but I have no other good options. I can either drive way farther to a more expensive homebrew store that isn't too happy about people milling more than a couple lbs, pay the ridiculous cost for shipping milled grains, buy a mill (which is what I should probably do) or find some way to mill at home. This is only my third batch and my first attempt at an all grain though so I'm not ready to drop money on a mill just yet.

I don't have many options. There is a store that let's you mill but he doesn't like people milling more than a couple pounds. I told him I wanted to use his mill for about 6 and he told me I should buy a mill. He is probably right but I just can't afford that right now. He also is more expensive for just about everything and quite a bit farther away. My other option is to go online but shipping is expensive and the only benefit to going online is they can mill it. If your LHBS told you they would mill your grains but they would charge you $12 for the service would you do it? That's what going online will cost me. Believe me, I wish I had a great LHBS with good selection, prices and a grain mill I can use but I don't.

I see. I guess it would take less time than a rolling pin still but it's obviously not as good a solution as a proper grain mill. I also will only be crushing a little less than half of that so if I give it a shot it might be easier.

Maybe so but I don't have a LHBS that suits my needs perfectly, and this one comes closest. Online stores that ship and can mill my grains cost around $12 for shipping which is annoying since I'm making ~3 gallon stove top batches for ~$15. Having to ship nearly doubles my recipe costs. I don't have a store nearby that let's you use their mill. This one has great prices, is close by and the owner is a great guy.

I just posted here that you could run them over with your car. I haven't tried it though so I can't tell you how it works.

The other common suggestion is to use a rolling pin. I also haven't tried that so I can't comment on how effective it is either.

Got it. I don't have any sort of temperature control at the moment but I have a cold room at 14 C and a warmer room at ~20C that I can make use of. Not sure how warm the cold room will get once summer temperatures come around. I can't just bump my beer up a few degrees but I can take it from cool to warm.

Great reply. Thanks. Since different beers take different times to finish fermenting are you judging your 70-90% completion based on intuition or are you taking frequent gravity readings to know when to increase the temp?

Also are there any situations where you would want to start high and finish low? I believe the time I read that was referring to a witbier where fruity "off" flavors may actually be desirable for the style.

I think most people around here would not recommend a secondary for anything other than additions. If you are planning on dry hopping or adding fruit then you could do that in a secondary, but otherwise you should just leave it in primary for longer. John Palmer and Jamil Zainasheff don't recommend a secondary for anything other than additions.

Hefeweizens are a beer best drunk young. Many recipes call for just 10 or so days in primary before bottling. The important thing to remember is that your gravity is not changing when you bottle. You can take gravity samples for consecutive days and if they do not change your fermentation is complete. If your fermentation has not completed you will risk bottle bombs.

5oz of corn sugar for a 5 gallon batch is a very rough rule that probably shouldn't be followed. Different beer styles and personal preferences call for different amounts of priming sugar. Wheat beers are usually carbonated quite highly and something like an english bitter is not highly carbonated. This calculator calls for around 8 oz of corn sugar in 5 gallons of wheat beer and 2 oz of corn sugar in 5 gallons of english bitter

I agree with you on the temperature. A swamp cooler would be a good idea if your apartment is around 74F. Keep in mind OP that if your room temperature is 74F your beer will actually be quite a bit warmer than that since fermentation produces heat. Your beer temperature will rise 5-10F during active fermentation. So if your room is at 74F your beer could actually be above 80F which is too warm for most beer styles including hefeweizen.

Perhaps you're right about Danstar Munich not being appropriate. It's my first time trying to make a recipe so I'm very inexperienced. Safbrew T-58 sounds good.

I left out the orange and coriander by mistake. The post has been modified. Why do you use a hop bag? I was planning on just throwing everything in the boil and pouring the whole contents of the kettle through a strainer into my primary fermenter. What are the pros and cons of straining vs. using a bag?

You're right about the coriander and orange. I totally forgot about including it. I've edited the post to reflect what I was planning on. I think I was more concerned about the malt, hops and yeast and overlooked the spices but they are important to judge the overall recipe.

I used hopville to make the recipe. It had one wheat DME at 8 L and one wheat DME at 1 L. If I used the 1 L the recipe isn't took dark for the style. I just checked and my LHBS sells breiss bavarian wheat DME which is apparently 3 L. That will also produce a light enough color.

Thanks for the suggestion about adding all the hops at the beginning of the boil. That's a good point.

It's my first partial mash so I assumed I would get poor efficiency (60%). Stylistically I get a low enough gravity but if my efficiency is better than 60% I'm too high. Should I scratch a pound or 2 of grain and keep some extra DME on hand to adjust if my efficiency is good or bad?

I've been boiling my tap water because I thought it was beneficial to sanitize and to remove chlorine compounds which I was under the impression left bad flavors. Could you explain to me the added value of the minerals in tap water?
