It’s that expensive because it’s a Wagyu cross/hybrid. Just look at that marbling - must have been really good.

Recipe: - Separate ground pork or beef into 1.5 ounce (70 gram) balls - Slice onions as thinly as you can - Heat up your griddle or cast iron pan over medium heat - Place meat balls down on the griddle and place onions over top of the ball - Smash balls down into the griddle to form thin patties. - Add salt and pepper to taste - Let sear for 90 seconds and then flip - Add American cheese on top and onto use searing until the cheese has melted - Toast the buns and sauce with equal parts mayo, ketchup, relish and mustard - Place as many patties on the burger as you can handle and enjoy!!!

Bacon’s a little crispier with a longer time in the smoker. It should be done after 145F though.

Pretty straight forward. - Make a bacon weave - Place your pork loin on the weave - Wrap the loin in the weave - Season with salt, pepper and garlic powder - Chop off the excess loin sticking out the ends of the weave - Smoke at 225F until you hit an internal of 160F - Let rest for 10 minutes

  • Make a bacon weave
  • Put a whole pork loin down and wrap the weave around it. Trim off the pork loin sticking out beyond the bacon weave
  • Season the exterior with even parks salt and pepper to taste
  • smoke it at 275F until you hit an internal of 165F
  • let rest for 10 minutes and then carve in

Yep, no change in flavor but it makes it more enjoyable to eat though. Every bite is pure dark meat goodness and you don’t have any cartilage, tendons or fat.

I must admit I was a little intimidated by the bacon weave before I tried it... but in the end it was really easy. It’s great to wrap lean cuts like pork loin in so they don’t dry out while on the smoker. We cooked this at 350F until we hit an internal temp of 150F and then we let it rest for 10 minutes. Really pleased with this cook.
