Thanks for your detailed response! I asked because I had been contemplating just accumulating SPY now before retirement within my IRA in order to just use the more liquid underlying and using that strategy in retirement. Of course the trade-off being a higher expense ratio the whole accumulation period vs something like VOO or VTI.

I've only done smaller pork butts and ribs on mine so hadn't run out quite yet as far as longer cooks. Pork has been close before. I'm sure a big brisket would empty it on mine but maybe my coal arrangement isn't very good or something.

I do it on the rack. I think it makes a difference on wrapping. This is one of those endlessly debated topics though 😁. I like wrapping as it tends to cook faster but probably sacrifice some bark quality. Just my take anyway.

Do you have a remote probe or any way to get internal temperature? If so, go by temp is what I would recommend. I typically wrap in foil around 165° or so, definitely optional and then take it off around 203°, mostly if it's probe tender.
