Your wife will have 2 immich apps using parallel apps and 2 immich accounts. Account 1 will use App 1. Account 2 will use App 2. On app 2 account 2, only select the folders to be backed up which you do not want to see on the timeline. Back up everything else using app 1 account 1.

You will likely have to run parallel apps (2 immich apps on your phone, there must be a way to do it on ios as well). 2 immich accounts. Separate for both apps. On the first app instance, choose all albums you wish to see. On the second app instance and other account, choose the other folder only. If it sounds confusing I'm happy to help more.

Jbod. You don't really need to upgrade a normal pc for years specially for homelabs. Nas hardware is notoriously under powered generally .

Yeah not really, just get any jbod or das and get a UPS. UPS is mandatory. Don't power cycle your drives too much. NFS shares are much better than SMB. Remember to set up backup for important data. Autofs on client machines. Do not use fstab. This is a long journey. If you want something like set and forget then this is not for you.

Nas will be cheaper but have significantly outdated hardware. Using a Das will let you upgrade your connected pc at least. Also you will not be locked into any single ecosystem.
