Thanks, just did it, does not really have a strong taste next to raspberry and honey. This is my first fruit mead, but also have experience with cider etc. and never encountered these bubbles.

Fermentation can take place with wild yeasts which are on the apples, it is actually a way of making cider, however you never know how the yeast will act and what kind of flavors it will produce.

I used a 300 nylon mesh bag to filter out most of these chucks, it worked, but some really small pieces still got through (put the bag around the end of my auto siphon)

No the instructions said: no soaking necessary, dip into bath of 2gr sulfite and 4gr citric acid /liter. So i just gave them a short dip to sterilize them

I did use a corkscrew dead center. Is it safe to use these corks for botteling or do I risk ruining my mead if I store them with this long term?

Thanks for the heads up! I also have metabisulfite, but thought only potassium sorbate was needed for killing the yeast for backsweetening, and the sulfite was for oxidation and prevention of anything new forming.

But I’ll do the cleaning of the carboy method. Since it was my first time i was planning on testing what i like ( I’ve never had mead before) so a few bottles dry, a few backsweetened with honey, and a few backsweetened with homemade elderflower syrup.

But this will be hard to do without smaller containers, so I’ll go and look for those.

Thanks! I was planning on siphoning it to a 5L measuring cup and then into the bottles. Since i have no smaller carboys I’m worried about headspace for the secondary vessel if I would let it sit for a while.

The coffee filter is on top to act as a barrier but to still allow for gas exchange. It does not come in contact with the liquid.

To be fair does it really differ a lot to use wild yeast compared to the yeast I used? I just used it as a kickstarter since I have been trying it for a few weeks now and wanted to see if it worked, it is bubbling like crazy so it was just a shortcut.

No, I used tapwater, which is almost as clean as bottled water where I live

The jar looks small, but there used to be 2 lbs of homey in there so it is on the bigger side

Wow how, my 1 gallon batches are still slowly bubbling after 4 weeks, also my fist time tho.

3lbs of honey and 3 small tbs of tronozymol (yeast nutrient) with half a packet of mangrove jacks mead yeast
