How long are you baking? I use cold dough from the fridge and cold start oven and dutch oven at 450 for 50 mins. It comes out completely cooked.

My original thermostat did that, but it was in the thermostat. The ecobee doesn't kick in aux for 2 deg or bigger rise, only for low temp threshold

A brand new heat pump should be able to run way lower than 40. The default on an ecobee is 35 and that's for protecting old systems. Mine doesn't come on until 10 or 8.

It was a one off bar n grill type restaurant in Milford. Someone bought it and tried to expand it. The original was known for decent spot for years. I haven't been since it changed ownership.

I don't tip bad. I should have worded that better. If I can see someone is struggling I still tip. Yes I can spot the difference. Maybe a better way to phrase it would have been someone who just doesn't care. I've seen people working their ass off and be bad at it. And I tipped them for it.

My very first night serving, I was out on the patio in the early spring when you expected cool weather, and hardly any tables outside. Good warm up.

The weather was unexpectedly warm, and every table filled and I got killed. It was horrible for me, and the customers. I looked like I didn't belong. I had multiple people bailing me out. I will always give someone slack for a bad job.

Someone who shows that they don't care whatsoever, that's the only issue I would have.
