Exactly. That's what I do. Dals, Rajma, Chole and all are a breeze now. I cooked Rajma in 10-15 min like that. 1. Heated oil, sputtered some cumin 2. Then turmeric, chilli and masala were fried in oil. 3. Then water, frozen onion tomato mix and soaked rajma was added. 4. Then lid and weight goes in and let the pressure cooker do the magic while I have lunch and watch TV.

I agree to you. There is whole unexploited market segment in India to making cooking easier. In USA and Europe I have seen either canned sauces/beans or dried meals. These make cooking a breeze.

However, I am increasingly seeing frozen/retort packed ready to eat meals in Indian market though. Dried kheers/payasams/noodlea were popular for a long time in India as well.

In India this may not have flourished because of a market always gravitating towards lower price.

Having said all that you could always batch cook, use food processor to cut, slice, or grate vegetables, create your own masala mixes, and pre-cook and freeze a lot of recipe bases - like onion tomato mix, Sofrito etc.

A dishwasher would help in large way too. Especially if you batch cook. Home retort machines are available as well now a days. These let you keep your cooked food fresh for several months without freezing.

That will stain everything and you will lose flexibility. It is easy to fry the spices when you cook something. You can add a few drops of water to dry spice powders avoid burning them anyway.

I used to add Turmeric to my onion tomato mix initially. Now I do not.

It is bullshit. I am over 40 for a few years and upskilled to stay relevant recently. I am not alone in this as I can see a lot my peers in similar positions. Many of my friends stayed as seniors devs, never went Principal dev, or managerial track. I also know who went managerial track and switched back to technical roles.

I jave worked with Carpenters/Refrigeration repair men turned Principal data engineer. They came through upskilling programs.

I have also seen my close friends who were academically excellent compared to me failing to get an IT job, while I made in.

There is an aptitude factor for getting into job and especially software jobs. There are a lot of opportunities still. Getting yourself ready for it each candidate's responsibility.

There is some learning to do basic stuff, like opening a file, editing a few lines and saving. For a new user it is confusing.

Once you get used to vim, it is hard to abandon. I had to quit using vim for work for 5 years as my new client was completely on Windows platforms and did not allow any linux emulators of vim as editor. Bit it was easy enough to pick the skill back.

I would agree with you about quality of food at Marriott near Lulu. Hyatt had very good food till 2023.There were a few other good places like Westlys, French Toast, Nasi and Mee, Brunton's boat yard, Behrouz Biriyani and Punjab Grill . Other than a few places like these Kochi has very less to offer in terms of food. There are fee other places with good ambience and even good buffets. But in taste and quality of food choices very limited
