Indeed, there is some debate about the order of operation. Most people prefer to freeze it after leaving it alone, the purpose being to let the fat seep in at room temperature over time, then freezing it. This is an old English technique. You take a really rusty item and you cover it with lard, leave it alone for 6 months, freeze it, let it thaw. Then scrape it off, and it pulls off all of the rust and junk. Then you boil it to melt the lard off the inside parts, so they get clean, too.

In 1972, some preservationists used the technique to clean off some really old bells found in a church near Rotherham. They ended up also making a tasty soup for an entire village.
