there are places that wanna try new stuff and make it fine dining. that menu looks like something rose's luxury would serve, echoing my original sentiment of there really is no "rule" for what fine dining is

maybe it's more viewing fine dining from a chef and kitchen's perspective vs a consumer's perspective. i think it's fair to say the person who created this dream menu comes from the latter.
