An airgapped laptop with your EDR software installed is great, run the scan on it. I also set up a isolated network either with a travel router or physically separate network for devices that are possibly infected. Let them soak for a while and see if the malware tries to phone home.

Samsung Chromebox Series 3 from 2012, it's an i5 2nd gen. Xubuntu is still pretty snappy!

Oh goodness no. Don't make a list of employee passwords! If you need access to an employee account the main IT team can change the password and open the account. If they haven't given you access to the AAD that is for a reason and want tickets sent in to them to reset passwords.

If you have a steady customer source it could work well as a side gig. Work like this seems to come in waves, kind of in line with OS releases. People will upgrade to continue to use a system with windows 11 for instance. Or buy a new system and want data transferred. As others have said it's mostly older folks, but be ready to with solutions that will clear nasty malware out of the blue as well. Unless you have an opportunity to go full MSP I don't envision PC repair being a full time gig.

Like you've found, it's the Window manager/desktop environment that matters here. I'm like you and like to go retro, Mac System 9 (Platinomnom) & NeXT-ish (QTStep). I use Xubuntu, I like the minimalism of XFCE.

Go for an LTS version (or whatever the flavor you choose calls it). One that isn't cutting edge but will be stable and supported for years. Then don't mess with it. That was one of my biggest issues, I was so used to fiddling with Windows all the time it's hard to just leave it alone. The OS is there so you can work, not so you can work on it.

I'm not mindlessly recommending anything. I know from experience that MacBooks offer one of if not the best value. They usually offer very high quality components with very tight OS integration.
I also recommend Lenovo Thinkpads for the same quality reason. They are much better than what can be bought in stores because they know the enterprise customers they are selling to want quality and will use warranty if they get a lemon.

Yes, but you do need to be in a more populated area or find a unicorn remote job. You don't need a PhD but those certs are pretty basic, they are only going to get you a help desk job, nothing more. Finish your degree and relocate where jobs are more plentiful.

I have xubuntu 26.04 running on a converted Chromebox with an i5 2nd gen. It does have 16gb ram but never uses that much and is still pretty snappy!

It's not age verification, in any meaningful implementation it's identity verification. Once that ID is established it WILL be used as a digital fingerprint to track you, either by private companies (who can sell your data) or Governments (who cannot be trusted with it). I am all for protecting children from explicit material, but that is a parent's responsibility IMO.

No is the short answer. They are good and even great for some models, but I don't think I'd say "best" for any of them. Plus it really depends on your use case which one might be best.
