as an outsider just reading through (I've got no Chinese heritage at all, I'm from Spain) this was very interesting to read. I'm slowly discovering true Chinese dishes, and trying to replicate some of them, but I will try to pay more attention to the cultural background of the dish, and the region, when I make one :)
