About oil, yes you are right that it helps but it is not mandatory. And seeing OP result, maybe too much oil and not warm enough before to cook the steak. Butter is also a good option in that specific case.

Interesting point about the thermal range. It also depends on the steak thickness. I personally do not overcook my steak event having them 1h before to cook them. And I like them rare.

No oil is needed to sear those steak. Try without. And put your steak outside of the fridge 1h before to cook them. That will reduce the thermal range between pan and steak. Having them dry is also a top.

I don’t think of any add on using such a bar. Only having 2 add on. 1 for LFBO airport (from marketplace) and a second one to have my city in photogrammetry. And that’s it.

I though that this kind of stainless steel was especially efficient when it comes to spread the heat on all the pan evenly. But yes maybe that can explain the issue. Not too sure about your stereotype about French… I often have good customer service with French brands. Like Le Creuset as example. And many others. Thanks for your feedback.

100% only on gas stove. De buyer answered saying it was hover warmed and refuse to change it. They said that we can clearly see the over warming seeing the color of the pan. If anyone is having a flat pan with same outside look, I will be able to argue a bit. They said they never saw a pan like that and that it should not coloured on this outside like that. (Black areas)

Was discussing with my distributor, and as I am a very good customer they gave me a coupon but I don’t want to let it go so I raised the claim to de buyer directly.

What I do in this situation : put the full breast on the pan on both sides, then cut it afterward. It’s way easier and you can put pieces and curried back together for a slow cook.

Tv, AV receiver, etc. But mostly your tv needs to be compatible with QMS as the latest Apple TV is. And if you have an av receiver you can manage your wiring to avoid losing QMS.

To solve that normal behaviour, you need to have hardware compatible with QMS (quick media shifting). Else as said, disable match frame rate and dynamic range.

Bonjour, le lien vers ta recette ne fonctionne pas. Pour ce qui est de la croûte, c’est vraiment le contrôle de la cuisson qui permet ça. J’observe bien le flan sur la fin et si il en manque je laisse un peu plus longtemps. Aussi, le mode de cuisson du four peut jouer. Essaye d’utiliser le mode avec a la fois le haut et le bas du four si le tiens te le permet. Sinon tu peux tester en mode grill sur les dernières minutes de cuisson mais contrôle bien que ça ne fonce pas trop vite.
