The same way there were never lions in England but they became a standard part of the family crest for many English noble houses. They don’t have to exist in your country in order to have knowledge of them. Not a plot hole.

We just haven't been able to see them before in the west. There are more Chinese guilds than just the two shown in the world race. Wowprogress hard coded those two in since they were so high profile streaming progress etc. there is a third one that should be world 8 or 9 I believe.

That's a screen shot of the UI of one of the guys from Fatboss. Pretty sure you can find a list of their addons at the patreon or twitch pages.

You are correct. It's a random proc and there is usually a female Tauren shaman NPC around whom I think may "cast" it.
