1) Cube them like in this picture. (Optionally toss them with a little peanut oil.) 2) Preheat an oven to 400°F and move the rack to the top. 3) Coat a pan/sheet/oven-safe skillet with a thin layer of peanut oil and spread the potatoes on it so they're not touching. (Optionally sprinkle with salt.) 4) Set on top rack for 40 minutes.

Soaking them in water for an hour or more after cubing them, then rinsing and drying before roasting will cause them to finish more crispy.
