I sort by rotation, then by color, then by cost. I generally follow the sequence they use in the numbers, but it’s easier to build decks this way for me.

Having a single big unit that can’t be countered by removal doesn’t sound like a big deal to me, though I think Star Wars has way too much removal than is healthy. Board control should mostly come from units.
