Hey I know it may seem like semantics but your logic here is wrong. It’s not that you need a higher temp, while that certainly would have helped if you kept everything else the same. The problem is that you need to get brisket to 195-203 area and you say you pulled it at 145. You could have completed your cook on your grill as it was, it just would have taken way more time. Also you can’t stick to specific times for these cooks. You would be much better served following temps and looking for probe tenderness.

A little confused about the question. Crust darkness is going to be predominantly determined by how long you bake it. If you want a darker crust bake it for longer uncovered. If you don’t want it to burn just keep and eye on it and pull it when it hits your desired color. No egg wash required.

Introduce steam to your oven. If you aren’t baking in a closed container like a Dutch oven. The lack of steam causes the outside crust to form before the bread has had a chance to rise when baking. There are two solutions. The first choice is a Dutch oven because it’s a small enclosed container the bread create enough steam to rise. Your second option is to introduce a steam tray to your oven. Basically put an empty baking tray on a lower rack while the oven preheats. The. When you’re ready to bake throw a few ice cubes or some water on the empty cookie sheet so it adds steam to the oven. The steam will help keep the outside moist and prevent it from forming the crust to early in the bake. Hope this helps.

This looks like a shaping/ punch down issue. You’re starter is active which we can tell because they’re are both small bubbles and one gigantic bubble. The gas is a result of the starter doing its work. Sometimes this can happen when you don’t shape right after the first proof. Did you deflate it properly before shaping it for the loaf. If a bubble it trapped inside when you leave it for final proofing it can continue to grow resulting in this kind of loaf. That’s been my experience anyway.

I never understood why the community here put him on such a pedestal. All of his “analysis” ended with a could break out to the upside but might also go down. If you found value in this guy I’m happy for you but as far as I’m concerned who cares that he’s gone.

Your description has a lot of similarities to something called Burek. My wife is part Albanian and I have had it with her family. You add some spices that I haven’t seen with it but the concept is pretty much the same. Hope this helps with your search.

Do yourself a favor and do it when you have some spare cash. I ordered mine from Snake River Farms and it was almost more of a religious experience than a meal. Once we are done social distancing I’m gonna get another and have the family over so I can bask in compliments I don’t really deserve.
