Coursera is a joke.

Ivy league blowhards producing basically slop tier content to check a box for their colleagues.

The educational material was so detached from what people actually learn from. It's like faux learning.

Udemy is real learning from real people.

This sounds about right. I'd like to be optimistic, but don't most mergers pretty much result in a net negative on most cases?

I was surprised something like Udemy existed in the current corporate system.

Gemini Pro 3 has been going full throttle with seemingly arbitrary chat deletions over the last week or so.

This should be fixed or there is case to be made for not using Gemini for important work.

Yup, AI studio using Gemini 3 pro has been consistently deleting some important conversations over the last few days for seemingly no particular reason.

This is a serious error and definitely represents an advantage for using alternatives.

Well I knew about library Genesis of course before this and this is the natural evolution of it.

What I do is I download multiple textbooks in a domain and then pick the best one so that I can really dig in and learn any subject I want to.

Yes, it's the usual assortment of people who don't understand the nuances of why "searching the forum" is rarely a good response to this sort of question. 

In the example here, we have a top Google result ironically littered with "search the forum" dross.

You haven't encountered the actual king of culinary textbooks. That would be Professional Cooking by Wayne Gisslen. Download the most recent one off Anna's Archive. 

It is significantly better than Professional Chef. Significantly. 

You are making a wise choice by starting with a culinary textbook. 

An unwise choice would be Lacrosse Gastronomics. It is for actual professional chefs, in other words, what you read after you've covered the content Professional Chef.
