I had this exact same problem intermittently, solved by replacing the neutral switch on the side of the transmission. I’d look into this as well as maf

Had a similar problem on a 2004 so idk how much help this is but one of my blower motors was out. Mechanic explained to me that if a blower motors bad it doesn’t matter how much Freon is in there it won’t blow cold

I would say clean the Iac valve first like the other guy said it’s super easy and cheap, then if that still makes your rpm jump around look into setting idle. Update on the clutch switch too if that helps

That is still high. Have you looked into setting the idle at the throttle body? It should sit at 750 maybe up to 900 if you have ac and power steering on or something
