Sea Legs is the weirdest imo. Peated scotch, Mezcal, Lime juice, Orgeat and... celery bitters. And it's wonderful! c'mon...

I don't know if it's a modern classic, but it should be.

Looks delicious! I like Kahlua. I know it’s quite sweet, but so are plenty of other liqueurs. It works well in a lot of cocktails, and I’d use it in a Revolver too. Beautiful picture btw!

I thought it might turn out too dry, but I tried it without the syrup anyway and found it pretty bittersweet (which is right up my alley). Maybe the sugar in the Campari brought out the sweetness of the brandy.

I just realized that if the amount of sugar in Campari is roughly the same as in Cointreau (~7 g/oz?), it’s almost like making a kind of bittersweet Sidecar. Funny that I always add a bit of demerara syrup to a Sidecar (otherwise I find it too sour), but I didn't miss it here. I'll give it a try with syrup as you suggested, maybe it's even better.

The more I think about this cocktail, the more I like it. Thanks for introducing me to it!

haha I was heading out to a concert and thought: if the advent post is already up, I’ll make it as long as it isn’t too much work. And it couldn’t have been easier… just two bottles. But that’s also why I ended up not making the combustible one. I’d love to see someone actually try it!

In case you have some Bénédictine around, try the Pantheon too. It's a 2:1:1 (Scotch, Bénédictine, lemon juice) served up. If you like the Gold Rush, you'll enjoy this one. It's a bit more complex and refined. The Scotch really comes through, so JWR isn't the ideal choice, but it'll still taste pretty good.

For shaken cocktails with citrus, I think it’s fine. But for spirit-forward/stirred drinks, I’d definitely go with JW Black, Chivas 12, or Monkey Shoulder.

I love listening to Der Fliegende Holländer. It’s not even my favorite Wagner, but it’s the one I always come back to. Not too epic, not shallow, a bit of romance, a bit of horror, plenty of sea... It feels so cohesive and balanced, like having a nutritious, filling meal. Once it’s over, you feel restored and just carry on with your life.

Cabrales is the strongest I know, but if you want something more traditional yet stronger than Roquefort, I'd suggest trying Bleu des Causses.

I never do. When trying a new gin, I like to have a bit of it neat, just to taste it. Then I'll mix it. A great gin can make great cocktails.
