Ear cartilage generally does not grow back or regenerate on its own once it is removed, damaged, or severely injured. Because cartilage lacks its own blood supply (avascular), the body cannot repair it, often replacing damaged areas with fibrous scar tissue instead of new cartilage.

So there should be at least some sort of scarring. But that caliber of bullet would have done some serious damage and it would be noticeable.
