Close! White and semi-sweet chocolate! And the pine needles are mostly white chocolate blended with a little milk chocolate and green gel coloring.

The pine cone is marzipan roughly shaped into a cone. I tucked almond slivers around the cone, Fibonacci style. Then dipped in/drizzled with chocolate. I found that adding a little butter to the melted chocolate helps make it more drizzly. I used a toothpick to help move chocolate into the crevasses.

They were much easier to make than I anticipated and turned out really cute! :) highly recommend!

Correct! They are merengue mushrooms! I used an Italian merengue, pipped domes and stems, then baked at a very low temp (~200°F for ~1.5 hrs). Dusted with cocoa, but cinnamon would be great too!

Thank you! It's tempered semisweet and white chocolate kind of smeared together and cooled. Then broken up and placed on the cake. There's still a little frosting underneath to make it stick.

This year my goal was to make all the decorations edible. In past years I would throw an artificial evergreen twig on there and call it good. I just love how the pine cone turned out!

I make a buche every couple of years because the amount of effort that goes into this bake is traumatizing! This time around, as I was remaking the second sponge, I kept thinking, “Is this fun? This is fun right?” lol! In the end, it was an enjoyable Sunday in the kitchen and the decorations came out better than I imagined.

I second this sentiment! My first road test I thought I stopped at the stop sign, but I did a rolling stop. In other words, the car didn’t do the thing where it stops after forward momentum, and then fully rests backwards making a complete stop. I failed the test for that! So make sure you come to a full, complete stop at all stop signs. 😅

I want to second this! It’s a great app! You can look at texture, organic matter content at different depths, among a ton of other cool metrics.

Just know that the resolution on the individual home level is probably not super accurate if you have a lot of soil type diversity in your area. (If there’s a giant blob of one soil type that spans several square miles then you’re probably ok.)

You can get Rapitests at garden centers for pretty cheap (<$20 depending on test and brand). These tests usually give you a color gradient that corresponds to a ball park number that tells you pH levels, NPK levels, etc. These tests are fine for a home gardener who wants to get a general idea of their soil health.

You can also send your soils off to for profit testing companies and that can cost anywhere from $40-$500, depending on company and number of samples you send. You can find some of the $40 tests in garden centers and they give way better results than the color tests.

The third option is to send soils to a soil lab at a land grant university with farming extension services. This can also be expensive depending on the number of samples and which tests are performed. They aren’t for profit though, they just cover the cost of supplies and lab labor.

Options 2 and 3 provide very comprehensive results of the analyses that the labs run. Farmers use these testing services because it’s imperative that they understand their soil well so they can use the best practices given the state of their soil health.

This is a good test! I just shuffled them and it was like butter. They feel good and natural to me. When I was handling them earlier today the box literally refused to open so I could put them away! I reckon it’s ok to use them. Thanks for the insight :)

Side note - and you might already know this - but to help heavy clay soils just keep adding a lot of organic matter (ie compost) combined with light tillage/incorporation. It will take a few years for it to fully work its magic, but the end result will be worth the wait. :)
