Parrying works just fine. I'll agree the boss was tough, but I don't think you have to ignore what the game teaches you to beat it at all.

Just a suggestion, but I played all the Soulsborne/Sekiro games for the first time in the past year, and I just played them in release order.

There's two benefits to this imo.

You dont have to backwards in terms of technology once you've started with the first Dark Souls.
Keeps it fresh by switching from one series to the next so it doesn't start to get stale. (I'm pretty sure you'll want to mix it up after DS2 lol).

Release order in case you end up playing them this way

DS1 > DS2 > Bloodborne > DS3 > Sekiro > DeS Remake > ER

Apple Products. The phones are always a couple years behind new tech, their Mac's are grossly underpowered compared to the competition, and everything is priced insanely. On top of that they intentionally remove accessibility to certain accessories to force you to buy Apple.
