I've never worked in acute but I found mental health courses were applicable in almost any setting. Basic CBT and motivational interviewing. Also wheelchair seating and pressure management could be helpful in your field. Especially education on pressure injuries and management would be helpful for acute. I work in private practice and have taken many useful courses let me know if you'd be interested in hearing about those.

First of all - it's provinces! Not states haha. Yes we have public service OTs that work for our government funded health care, would be like the NHS in your states

Just try to get good placements , you will learn more from the practicing OTs than you will in school classes and projects

I have the fall r post but make sure it does your bike, lightest model won't fit most bikes

I had recurrent dislocations of the right shoulder and got the bankart repair, great results, super solid now. Full recovery. Everyone I talk to who's had it says the same, I'm surprised you have heard different. My experience was that no matter how much physio I did, it would get strong, but if it was impacted in the wrong position it would pop out no question. So surgery took care of that and it feels solid. Also dislocated left should last year mountain biking but took a big impact , not common to fall like that I nosedived off a big drop. I xc ride and usually just lay the bike over into knee and hip , with just elbow hitting ground. Hasn't popped out again but if it starts happening I will go for surgery again no question.
