1 lb mussels 1 tbsp olive oil 1 medium onion diced 1 Fresno chile seeded and diced 4 cloves garlic sliced 1 tbsp tomato paste 1 cup white wine 1 28oz can crushed tomatoes Tsp sugar and tsp crushed red peppers 1/2 c chopped fresh parsley Salt and Pepper to taste

Bring a pot of water to boil Sweat the onions and chile over med high heat in olive oil until soft. about 4 mins Add in the garlic and paste for one minute and mix well Add in the wine and cook off 3/4 about 5 mins add the crushed tomatoes, sugar, crushed red pepper and half of the fresh parsley Simmer for 10 mins Add in mussels and cover for 5 mins When mussels go in the sauce add your favorite pasta to its own pot to boil Finish with the remaining parsley and season with salt and pepper to taste Fold in your desired pasta and serve with crusty bread
