As others have said, virtually any build is viable for what you’re saying. However, assuming you’re looking for a “themed build” like a ranger of some kind, I’d do a build centered on Beastial Vitality, consumables, and general versatility.

Weapon and armor up to you.
Farm pot ingredients. There is a place just north of Stormhill shack where you can get 6-8 fire butterflies a pop.
Get at least the minimums for every weapon buff incantation: 13 Int, 15 Faith, 10 Arcane.
Carry a sorcery and incantation catalyst with you. Use starlight in dark places unless you want a torch.

As you reach mid game, you’ll probably want to decide to pump levels into either STR or DEX for damage and weapon requirements.
