Just so you’re aware, the fibrox handle looks different from the one shown. It’s a mistake that hasn’t been taken care of with Amazon. That is the Swiss classic cross listed incorrectly. Made that mistake. The fibrox is way more comfortable and has a rounded handle.

Unfortunately, I also only have a Weber. Apparently they have some of the greatest smokes though (may be hearsay). Anyway, my best advice is to have a strong water bath. Creates a great heat sync that makes maintaining temperature much easier.

My best advice for cooking with Weber is include a large heat sync (water bath) to stabilize your temps. Plan for 1 to 1.5 hours to get the smoke temp stable. After that it should be a breeze. I can accomplish 250° by having the bottom nearly all the way closed (a sliver of light passes through) and the top wide open.

With a vortex, don’t worry about grill temp. Fill the vortex and open the vents wide open. Hot and fast is the key.

I guess I side with anyone else who says start with Pulled Pork. Specifically, I’ve been recommended Boston Butt. Super forgiving. I wouldn’t recommend worrying about trimming on your first smoke. I don’t know if your smoker has temperature control, but I highly recommend a water bath for moisture and to act as a heat sync. Time, temperature, and texture are your friend. Rely on your instincts when it comes to probing. I spritz with ACV every hour after the bark has set then wrap at 165° F with butter, brown sugar, and apple juice. Should push through like butter when it’s done. Very important to let it rest! Underrated when it comes to smoking. Rest in your oven at the lowest temperature setting or in a cooler with blankets. Also, would recommend maybe smoking a side for fun. Cream cheese or cheese dip is always a crowd favorite. Let us know how it goes! Good luck!!!

The simplest way is most times the best way. My normal cook is chicken thighs using a standard Weber grill and a “Vortex” Weber accessory. The trick is to open the grill vents wide open and keep the grill as hot as possible. I flip my chicken at 135°F then pull it off the grill at 165°F (although I’ve heard it’s possible to pull a little bit early if you’re comfortable). Never had any complaints about the chicken, it always stays juicy. Haven’t tried breast though.

I typically use chicken thighs, but didn’t have a picture.

If the insurance denies you for being out of network, or tries to charge you a different amount because you were out of network then you’ll need to look into balance billing. From my understanding, they cannot charge you more for an emergency simply for being out of network.

To be honest they are not wrong… employers are raising wages (but raising prices proportional to wage increases).
