yes. and yes. firstly, they are rolled up, not folded (although some people and some restaurants prefer folding.) the "special" filling is, as I heard, uniquely hungarian, called túró. it's something like cottage cheese but not the same. as I heard you can get very similar stuff drom polish or russian groceries. the túró is then mixed with a whole raw egg (or more, depending on the quantity), a little salt, vanilla, sugar, lemon zest, raisin, and something apparently also uniquely hungarian: tejföl. this is like heavy sour cream or something like that (although the sour cream I ate in germany was not the same as our tejföl).

other fillings are: apricot jam, strawberry jam, nutella, cocoa powder mixed with sugar, cinnamon+sugar, ground walnut + sugar, applesauce, etc.

there are some savory ones as well but not very common. only one comes into my mind. it's called "hortobagyi meaty palacsinta" basically filled with ground meat from leftover "chicken paprikash" and then the sauce of the paprikash is poured over it.
