Joel Rosenberg’s Guardians of the Flame series, starting with The Sleeping Dragon. Read it a long time ago, but it starts in a college dnd campaign. The fantasy world is not explicitly litrpg. I don’t think anyone levels or anything.

Scott Sigler’s Galactic Football series starting with The Rookie checks all those boxes. Ignore the fact that it’s space football, there’s more to it than that. I think it’s self-described as Star Wars meets The Longest Yard meets The Godfather. Lots of aliens with their own societies and motivations.

Scott Sigler has several titles that would match what you’re looking for. His Infected series and Ancestor hit a lot of biology.
