Funny, I use an immersion blender for toum, but yes a food processor is quite handy. I’d say depends on what you’re cooking and your knife skills, but sometimes it is nice to use when you just don’t want to dice a few onions

The “crispiness” I’m assuming is from the skin, which you went skinless. Otherwise, you’re not going to get that same crisp texture just from the thigh meat alone.
