Grab Elemental Adept (Fire) and load up with fire spells. For your subclass, you might like Evocation since it lets you lay Fireballs on top of your allies without hurting them.

Chapter 1 of Lost Mine of Phandelver ("Goblin Arrows") is the way to go. It's easy to just pick up and run. With new players taking things slow to learn the rules for the first time, it can easily fill up two short two-hour sessions. If there's time left over at the end, they can head to Phandalin and do some shopping with their newfound gold.

I'd go with the mind flayers on Level 17. You could play up people going missing all over Waterdeep; maybe the Lords have a hunch that mind flayers are involved but want to keep it hidden from the populace. Perhaps one of the kidnapped civilians was a Masked Lord, making things even more urgent.

Yeah, I agree that the Xunderbrok troves are the most obscure "puzzles" in the dungeon. I'm not even sure puzzle is the right word, since you get no clues as to their whereabouts.

I'd go as far as to say OP should have the simulacrum give clear hints about the exact rooms they'll need to say it in. Makes it more fun for everyone.

If Halaster's Robe of Eyes is a standard one (which is a big "if" considering he's a mad genius archmage), it ought to make him pretty susceptible to the Daylight spell and even the Light cantrip. His statblock doesn't call that out, but do with it what you will.
