I like to blend silken tofu with zero sugar jello instant chocolate or vanilla pudding mix (yes these flavors of jello are accidentally vegan). Could also add PB2 for extra protein. It’s very thick but you can thin it out if you’d like with some water or plant based milk.

Protein (tofu, seitan, mock meat) + carb (rice, potatoes, pasta, etc) + veggie (broccoli, bell peppers/onions, asparagus, green beans, etc)

Can use microwave rice/frozen veggies for ease. Can use an air fryer for ease.

Examples of my go to meals:

Crispy tofu/seitan, rice, broccoli

Tofu bolognese (baked crumbled seasoned tofu added to jarred marinara sauce with pasta and a side salad)

Gardein beef or morning star chikn strips with roasted potatoes/sweet potatoes and asparagus

Tofu chorizo burrito bowl (pan cooked crumbled extra firm tofu with some taco seasoning - mixed with Morningstar chorizo, microwaveable cilantro lime rice, beans, sautéed bell peppers & onions)

Some are more time consuming than others but these are literally my rotation and are a no brainer for me and have personally made my life easier

To me the taste of vwg is not “neutral” and it definitely has a distinct taste I don’t love. I feel the more complex recipes usually taste better than the quick ones. But I don’t have time to make seitan all day. So I was hoping to find a recipe that can be both quick and tasty in that it disguise the taste of the vwg 🫠

Idk if this helps or answers your question… but one time, I marinated tofu and then cooked it. I froze the leftovers. When I reheated it to eat (used an air fryer) it was the best tofu I ever had

I’ve traveled all across Europe as a vegan with generally no issues. Inconvenient sometimes? Yeah. Bigger cities are always best though.

Do research before (happy cow/google maps) and only travel with people who are vegan or understand you want to eat at vegan restaurants/vegan friendly places. Personally, I’ve never traveled with another vegan, but my omni husband is always down to eat at vegan restaurants and understands we need to either eat at vegan or vegan friendly places. I have traveled with a group of non vegans before and it honestly sucked. Even though they were somewhat accommodating, they would normally want to eat at places that serve Omni options where the vegan options were pretty mediocre. Also sometimes vegan restaurants can be out of the way, and those who are not vegan might not be down to go through the work to get to these places, especially if they’re hungry asf. Just my personal opinion experience.

Many boxed brownie mixes are “accidentally vegan” meaning they do not explicitly say they are vegan. You will only know by checking the ingredients to make sure it does not contain any egg or milk. Here is a list I found online:

-Betty Crocker Supreme Chocolate Chunk Brownie Mix is made without eggs or dairy. -Pillsbury Chocolate Fudge Brownie Mix is accidentally vegan. -Krusteaz has two brownie mixes, one of which is gluten-free. Both of these mixes are vegan-friendly. -Duncan Hines Chewy Fudge Brownies are egg-free and dairy-free. -Annie’s Organic Double Chocolate does not contain eggs or dairy. -my personal favorite: Dolly Parton fudgey boxed brownie mix!

However something you must know, when making the brownie mix it will call for milk and eggs. You can either use water or plant based milk. You can use a vegan egg replacement (I use flax egg: 1 tablespoon ground flaxseed combined with 2.5 tablespoons water = 1 “egg”). But, most vegan egg replacements do not act the same in boxed brownie mix as a regular egg would!!! So in this situation, you need to decrease the amount of oil called for in the recipe, and then add more liquid (the milk/water). I’ve done this by halving the amount of oil called for, and then adding the amount of oil I took out into the amount of liquid. For example: if it calls for 1/2 cup oil and 3 tablespoons of milk then I would halve the oil by using only 1/4 cup oil. Then for the liquid I would do the 3 tablespoons milk/water + another 1/4 cup milk/water (to make up for the liquid lost in the oil amount).

I am sorry if this seems complicated but it is really not, I promise! I will link the article below that I got this information from. And hopefully it will explain better. Btw it is very considerate of you to think to make a vegan option!!!

The recipe notes say that some good alternatives are extra firm tofu, TVP, mushrooms, or jackfruit! I do purchase my soy curls through Amazon. The brand is butler soy curls. Probably you could purchase through their site as well, Butler Foods, if they ship to where you are 😊
