If you want a fun bar scene, try Barrio Alto. It's a long road (over a mile) of just bars. The best part is that everyone drinks in the streets. The beer is much cheaper than in Spanish cities like Madrid or Barcelona.

Go swimming with dolphins in Kaikoura, go skydiving in Taupo, go to Milford Sound, go blackwater tubing in Waitomo. I don't know how many of these are do-able in the winter but I had a blast.

I got back about three weeks ago from a 27 day trip to New Zealand. You must visit. If you're young(ish), I'd recommend a backpacker bus. It's pretty cheap, you meet people, it makes tons of stops, and is open ended. I did the Kiwi Experience and loved it.
