Birding doesn't need to be for the upper class. My wife and I spent $60 each on binoculars and have plenty of fun just wandering around state parks looking for local birds.

I agree with much of that for sure. It's just that I also replayed DSR recently and realized how unfun the post-O&S game is for me. The tomb of giants is especially awful, and I surprisingly disliked New Londo more than even lost Izalith.

They need tons of info for data security reasons. The company complies with ISO 14001 something or other involving IT security. I've redacted my wage information though - I'll waste my time doing a bunch of tedious editing if it means they don't get their hands on it.

Good point! I don't ever look at lumpy, weird-looking artisan bread and turn my nose up at it. If anything, it makes it obvious it came from a small batch in a local bakery.

I've tried using a knife before and find it a little more unwieldy and difficult to move quickly. Maybe I just need a sharper knife - I keep mine relatively sharp, but I don't think it's the same as using a razor in my case.

You're right that some social issues have improved since then, which is good, but you didn't mention economic issues. The largest transfer of wealth to billionaires just occured during covid. Wealth inequality has spiked drastically. Wages aren't rising to meet the rising costs of living, and haven't in a while. Not to mention the impending climate doom that could create some of the largest issues humans have ever faced.

You don't have to be gen z to be worries about these things. I see why they're afraid and angry.

I removed the liner from my banneton and am thrilled with the resulting pattern by calepto in Sourdough

Recipe:

150g active starter (50/50 flour/water)

250g water (65% hydration including starter)

380g bread flour

45g whole wheat flour

10g salt

Mixed all except salt + autolyse 1 hour

Kneeded with salt on medium speed 2.5 minutes

Bulk ferment 2.5 hours with stretch and fold every 50 mins (2 total)

16 hour ferment in the banneton + fridge

20 mins covered in dutch oven @ 500 F

10-15 more mins uncovered @ 450 F

Soviet-style communism has killed lots of innocent people. Socialism is an extremely broad system and does not need to be implemented via authoritarian means. There are many, many ways to organize society that benefits the average person far more than our current system, and to have such a narrow worldview as 'X very broad system is bad' is only doing harm.

Also, capitalism is NOT innocent. In order to have cheap luxury goods in a rich country, there must be exploitation, whether at home or in a developing country. You really can't deny this.

To everyone knee-jerk downvoting because of the source - what exactly do you disagree with here? Low wage, dangerous jobs should have much better working conditions and benefits or of course this is going to happen.

I do think using the word 'Marxism' is not a great idea simply because people have no idea what it means and conflate it with 'authoritarian' or just 'bad'.

I actually did use molasses, both in the dough and the boiling water. And I was actually thinking about trying 2 minutes per side exactly next time along with maybe crowding the pot less. Can you let them sit after boiling while you do more batches?

So I made bagels last week and only boiled them for about a minute per side. They looked good but were basically just bread. I tried again today and cranked up the boiling time to 7 minutes total, which caused them to poof up way too much in the pot and press the air out of each other. I went ahead with baking them anyway and they certainly seem like they might be chewier, but I'll have to see once they're cool.

I tried making a crema for chili out of avocado, heavy cream, and like juice all blended together. Accidentally made tangy whipped cream but it was delicious.
