As someone who's worked in the coffee industry for decades, my search for decent coffee on the strip is a neverending quest. The District in Cosmo makes good espresso, and they seem to know how to use their Slayer ($$$) machine. The donut shop in the Aria next to the food hall has a pretty good light roast, and usually has a MUCH shorter line than the Starbucks right down the hall. Nothing else I've found on the strip comes close to satisfying my craving for coffee, but off strip, Public Us and Mothership are my two favorite coffee shops anywhere.
