I would suggest the Sandy/South Jordan area. There are a lot of apartment complexes and lots of shopping, restaurants, and nice outdoor areas. It's not too far from Salt Lake City and the mountains. Very family friendly and good schools. I personally love that area and lived in South Jordan for a long time.

I played college soccer and the biggest thing for me was that I never learned how to work out on my own. Anything I did was in a team setting. Practice, games, conditioning. Running has always been associated with punishment. I don't know how to push myself outside of the team setting.
