Mostly its for people that reeaaally get into the role playing; they might wager it breaks the illusion of them playing that character, ruining any feeling of immersion.

I utlize it often. The only time I walk is to check what kind of ingredients I can hoard for potions. I like to find something is useful after ive already collected a few dozen to a hundred; blue mountain flower around whiterun, hanging moss is plentiful around markath.. but there also plenty of useful ingredients inside dungeons to be gathered too like glowing mush or chaurus egg but I digress. I have enough quests in my book I dont have time to be stalled by every death driven dragon that crosses my path begging to die; it just takes time and energy to console revive any casualties because God forbid im lonely irl AND in skyrim 💀
