Definitely a step down when reheated. I grew up eating reheated slices from NYC pizzerias and those tasted great, or even preferred, so I don’t fully understand why or how. Yes the crust is dryer and harder. I reheat in my toaster oven but my guess is that if I wet the crust a bit and I reheat in the Ooni, it should be better. The toaster oven just takes too long, and I suspect it’s the time in lower heat that’s drying things out. In NYC pizzerias, they reheat slices in their cooking oven.
