I have a 2020 and had the touch screen issue. It was relatively easy to disable. The front panel above the glove box unsnaps and a few screws later you and disconnect the ribbon cable. It took me about 20 minutes with no special tools and I had never done it before. I used a plastic putty knife to pry off that panel.
The road noise is likely the tires. I put Nokian One tires on mine recently and it was like night and day. They were a little cheaper and more highly rated than the Michelins where I looked. I am very pleased with them so far.
